Hello friends. I hope you had a nice week. My week flew by but hopefully time will slow down over the weekend. Though I pretty much doubt it. Ha.
With Mother’s Day right around the corner I’m happy to be sharing this cute and imperfect waffle cake and an easy Mother’s day brunch idea.

I recruited our middle son Tristan who absolutely loves to cook and knows so much more than me when it comes to baking and overall cooking. He made the waffle batter and
gave me the tip to beat the egg whites and fold them into the batter so the waffles cook nice and fluffy. 🙂 That might be common knowledge but I’m not a baker so I didn’t know. ha.
The waffle cake is imperfect but I think it looks so cute. It just has whip cream in between layers but you can do any frosting you prefer. I would suggest you make some extra waffles and
leave them to the side just in case someone prefers them without whip cream.
I picked up some croissants and some different types of bagels…
I placed two different types of cream cheese but had every intention of making different flavours but ran out time…:(
Some other things you can add to this little buffet are: scrambled and boiled eggs, yogurts, granola bars and of course mimosas…:)
It really was easy to put together and I think makes such a pretty statement.
