Hello dear friends. I hope this finds you well. I’m sitting here on a Wednesday morning listening to loud bangs as our roof gets replaced.
The roof is 15 years old so it was time to change the shingles.
It’s a beautiful summer day today and perfect day for my very favourite salad: A simple Burrata and tomato salad.
This salad is so easy to make and it truly combines some great summer flavours like basil and tomato.
1 ball of fresh burrata cheese
10 to 15 heirloom cherry tomatoes
Aged balsamic vinegar
Kosher salt and freshly ground black pepper
Fresh basil leaves
Cut cheese in half crosswise and place the halves, cut side down on plate.
Cut each tomato in half and place them around the burrata.
Drizzle the tomatoes and burrata generously with olive oil and balsamic vinegar and sprinkle with salt and pepper.
Scatter the basil on the salads, sprinkle with sea salt, and serve.
It takes no time and it’s sooo delicious.
