This salad is so easy to put together and in less than 15 minutes you can be enjoying a healthy and delicious snack or side dish.
Grilled Zucchini Salad
3 fresh summer zucchinis
1 tablespoon of olive oil or flax seed oil
3 tablespoons of fresh herbs of your choice, chopped
1 tablespoon of green onions, chopped
juice of half a lemon
salt and pepper to taste (I used sea salt)
- Use a peeler to slice zucchini into thin slices
- Toss with oil and salt and place on grill for approx a minute or until seared
- Place zucchini in dish and add lemon juice, herbs and onions; toss to combine
- Garnish with extra herbs and serve

So fresh, delicious and super quick to make.
